Pumpkin Bread

3 1/2 c rice flour
1 1/2 c stevia
1 1/2 t salt
2 c pumpkin (or substitutes)*
4 eggs
2 t baking powder
1 t baking soda
1 t ground cloves
2/3 c salad oil
2/3 c water
1 c chopped nuts (optional)

*Pumpkin can be substituted with 2 cups of unsweetened applesauce or 2 cups
ground cranberries.

Mix all ingredients except nuts until well blended. Add nuts. Bake in
greased loaf pan at 350 degrees for 1 to 1 1/2 hours until done.
